A rich, aromatic tomato and coconut curry that showcases Makhana as a hearty main ingredient. The pops absorb the sauce beautifully while retaining a satisfying bite.
💡 Add 2 tbsp natural peanut butter with the tomatoes for extra creaminess and ~8g more protein per serve.
Ingredients
- 200g Nutriva Foods Lightly Salted Makhana
- 1 can (400g) crushed tomatoes
- 1 can (400ml) coconut milk
- 1 large onion, finely diced
- 3 cloves garlic, minced
- 1 thumb fresh ginger, grated
- 2 tsp garam masala
- 1 tsp cumin seeds
- 1 tsp turmeric
- 2 tbsp vegetable oil
- Salt to taste
- Fresh coriander to serve
Method
Step 1
Heat oil. Add cumin seeds, toast 30 seconds.
Step 2
Add onion, cook 6–8 minutes until golden. Add garlic and ginger, cook 2 more minutes.
Step 3
Add dry spices, stir 1 minute to bloom aromatics.
Step 4
Pour in crushed tomatoes. Simmer 8 minutes.
Step 5
Add coconut milk, bring to gentle simmer. Add Makhana.
Step 6
Simmer 8–10 minutes until Makhana softens and absorbs the sauce. Season with salt.
Step 7
Serve with fresh coriander alongside basmati rice or naan.
