A luxurious milk pudding — Makhana replaces rice to create a lighter, higher-protein version of this beloved classic. Serve warm or chilled.
💡 The kheer thickens as it cools. If serving chilled, add a splash of extra milk before refrigerating.
Ingredients
- 150g Nutriva Foods Lightly Salted Makhana
- 1 litre full-cream milk
- 3 tbsp sugar or honey
- ½ tsp cardamom powder
- Pinch of saffron soaked in 2 tbsp warm milk
- 2 tbsp crushed pistachios
- Rose petals to garnish (optional)
Method
Step 1
Dry-roast Makhana 3–4 minutes until lightly crisp. Crush half coarsely; leave half whole.
Step 2
Heat milk in a heavy-bottomed pot. Bring to a gentle simmer.
Step 3
Add all Makhana to the milk. Stir well.
Step 4
Simmer 15–18 minutes, stirring frequently, until milk thickens and Makhana is completely soft.
Step 5
Add sugar, cardamom, and saffron milk. Stir and simmer 3 more minutes.
Step 6
Serve warm topped with crushed pistachios, or refrigerate 2 hours to serve chilled.
